Is there any ark myth with more than one ark for the same flood? Preferably different subplots?
Even Douglas Adams A, B, and C arks were actually just the B ark.
The 2012 movie featured a fleet of arks but treated together so not really a multi-ark plot.

I read a Noah's ark novel from the perspective of one of the sons wives, and in that there's a scene where they come across another ark with only farm animals on rather than ever kind of animal

An Ark is very resource intensive. Basically a moonshot. Hard to get funding when no one believes the Flood is coming.
Noah probably went broke and deep in debt. Then the debtors all drowned...
