Recently I've gotten to the point where I have a lunch salad I can make in ~4 mins at home that blows my mind with how tasty it is. There are infinite variants but here is the core:

I start by prepping two things ahead of time, each can be made in batches that last several days: 1. Tuna & salmon salad: 2 cans tuna, 1 can salmon, white wine vinegar, olive oil, mayo, salt, pepper, celery salt, dijon

2. Norwegian cucumber salad: peel and thin-slice cucumbers, salt and rest them for 15m, drain, add white wine vinegar and finely chopped dill

Then, when lunchtime comes, I take a big handful of spring mix, put it in a large bowl, drizzle olive oil, season with salt and pepper, then drizzle aged balsamic. Throw on a teaspoon of dijon and then mix it up really well.

Then top it with cherry tomatoes, cucumbers, any veg you like, and the tuna-salmon salad. Maybe a few crackers/chips, or some feta/blue cheese. Done! Takes no time at all and is wildly superior to Sweetgreen or anyplace else!
