There is a lot to process here but I feel uncomfortable with the state of your chips. They look like when I cook Oven Chips at slightly the wrong temperature?

I actually pumped up the protein in the adai with a scoop of unflavored pea protein in the batter. Works beautifully. No change to taste. Hemp protein works too but adds a weird after taste.

Not for adai where I come from. Jaggery was usual condiment growing up but good jam is my favorite
