What is the point of canted wheels on a wheelchair? I see no obvious mechanical advantage and some serious asymmetric bearing stresses as a downside… is it just arm ergonomics for racing?

My guess is you can engage your pecs better pushing on that angle as opposed to just your shoulders if they were straight. So yeah, ergonomics I guess.

If both wheels were straight down and also easy to get a lot of torque down, they'd be so narrow as to be dangerously unstable

Think about how much force you can apply with arm extension
You can apply more on a vector pointing out from the origin (shoulder) vs one pointing vertically that does not intersect the origin. Think wide-grip pushups vs regular.

Brings the push closer to the trunk. Wheels perpendicular to the ground cause "chicken winging" with elbows pointing out.
