Haven’t had a good samosa since about 2002 in India.

Best samosas ever are actually the delicate singaras of Calcutta/East India I grew up with, and it isn’t regional chauvinism. Haven’t had those since 1996 or so. Punjabi samosas are too big, clumsy, and overstuffed.

I prefer smaller and less doughy. My wife and her family make my favorites using egg roll wrappers. Now we have to make them this weekend. The crave.

Yeah egg roll wrappers are close to ideal, but they tend not to be flaky enough and a little tough for me. I think, of the lazy options, phyllo dough might be best. Trick to samosa dough seems to be lots of fat and minimal kneading to avoid glutenizing.
