perhaps the greatest book about that period is Braudel's 2 volumes. albeit, superficially about to the areas near the Mediterranean, it is really about how to think about a period on the cusp of modernity...

The temporal sweep of the book is fairly extensive, ranging from 14th C to 16thC, as far as human affairs are concerned — from ice trade under the Ottomans to animals used for transhumance. For other phenomena, such as social institutions to geography, time span is much wider.
