this is my least favorite attitude, the idea that showing reality will lead to people drawing the Wrong™ Conclusions, so we should manipulate the presentation [of what content is popular on Twitch] in order to mislead people into preferred Correct™ Conclusions instead

How is this different from any sort of algorithmic feed curation? All platforms present an opinionated flow of content reflecting the positioning they aspire. Some aspire to a position with moral overtones. They don’t owe users a “fair” popularity based feed.
