Everyone subconsciously thinks they're a designer by virtue of having used designed products, and thus they undervalue all the invisible and discarded parts of design, which is where all the actual work is.

Oh yeah, depends on the problem at hand, a lot of UI design just needs 'good enough'. Graphic/visual designers are probably most prone to this since that's the design subdiscipline with the least generalizable problem solving skills.
