What's the right kind of fastener to create small pin joints (2 flat parts about 3-5mm thick each, with 3mm holes)? I need both moving joints and fixed-but-adjustable (ie easy to loosen/reposition/tighten) Is a simple nut/bolt the best option for fixed? For moving...what???

Found the answer, Chicago screws is what I want for the moving joints.

Second binding screws as useful. They are also called 'chicago screws'. Another useful fastener to look at for applications like this are small clevis and cotter pins.

The questions are really 1) how much load is this supposed to support in the “fixed” state? 2) how floppy is too floppy in the “loose” state? Simplest solution is probably bolts and wing nuts. But that’ll only handle low loads and it’ll be super loose when loosened.
