By bingeable I mean if you read one thing by them, you want to read the next thing and the next thing, like episodes in a bingeable tv show. I don't mean "page turner" within a single book which I think is more tactical

When a writer has helped you feel strongly during one book, you're more willing to believe you'll also be moved by other creations of theirs. Confirmation bias. With limited time, you want reassurance that it will be well spent.

I think bingeable here has to do with consistency and volume -- you have the experience once and you know that a similar version of the same experience is readily available. Plus probably an upper limit on how emotionally draining any one can be.
