versions of this on steam for games (you can stream within the home) and over the cloud gaming networks and airplay but there are points where the abstraction layer can break which makes the experience require some maintenance.

I'm thinking P2P wirelessly connect two ESP32's and then hook one of them up to a computer via serial, then find a way to get the other one to display the output and take in input from a keyboard. I wouldn't want to use anything dumber than a wireless microcontroller for this!
