1. We might as well start with WATER. Water has a million crazy and cool properties, most of which arise from its polar interactions. Water has a huge heat capacity, huge dielectric constant, and dissolves nearly everything.

Also, water is essentially opaque to all light except a narrow band of wavelengths that happens to correspond to the ones used by our eyes (shown in yellow)
