Why am I suddenly hearing so much about in-and-out burger and why are their long lines a thing?

I don’t think “premium mediocre” applies to a fast food burger chain.

Sounds like it’s actually the opposite of PM. Next-tier quality at McD band price?

Oh I was thinking Mcd was mediocre, and In-N-Out added a little veneer of premium

The trick to applying the concept is that the premium element has to be peripheral. So instead of a better patty than McD burger, if for eg they had slightly thicker napkins or a cooler looking container, that would be PM. Here they appear to have improved the core.

The big food diff are In and Out's fresh produce and meat. Nothing frozen or sitting in a box before order.

InO is definitely not premium mediocre. Their burgers are genuinely some of the best around, and completely unbeatable from a price quality ratio perspective

Perhaps the only place which has better burgers in the same smash style is Super Duper, which is more than twice the price.

No. Just being good doesn’t make it “premium”. A double double is like an NYC street dog: delicious but not premium. True premium means, “the poor can’t get it.” Premium mediocre means, “the poor might be able to buy it, but they don’t *get* it.”

The peripheral part of the premium mediocre concept never really stood out to me before. Put this way it has some resemblance to hipsterism, where they try to include the artisanal nature of production in the value of the product.

I am not sure if this would apply to InO but it would definitely apply to Shake Shack, Bareburger etc. Its all about concretizing the rare experience of having some of your favorite american classics with premium ingredients. You should feel happy and grateful to eat there.
