I’ve eaten more Mexican pizza in the month or so since Taco Bell announced it is discontinuing it than in the 20 odd years before.

If it's gotta be corn.....you can't get that crispness on a home stove. Don't try. It's messy. Get something prefried and basic, not too good or fancy, reheat it on a sheet pan in the oven around 425 or 450 with just a little of the oil of your choice, then add the rest
