Defining the idea of a “hobby” is surprisingly hard For example you might think low risk is part of it but many hobbies are high risk, like sailing. More so than dangerous professions. Or low impact. Many of the biggest inventions came from hobbyist tinkering.

I think distinction between hobby and pastime is one of degree (in some cases), not snobbery (necessarily). Playing cards is a pastime but knowing history and having related collections would be hobby IMO. Perhaps act of collecting (ideas/knowledge/stuff) is element of hobby.

When materials more expensive than labor, custom/homemade stuff is done to save $. When labor/time is more precious, can be status symbol (and/or <3) to have custom stuff/make things by hand (b/c economically prudent to buy ready made). 4 some, hobby is mental health, not luxury.
