How do you measure fire? Not temperature, or smoke. Actual fire. Is there a point sensor you can put above a gas burner for eg that would turn on at flame-on and off at flame-off?

You can also use an oxygen sensor. The presence of a flame will decrease oxygen in the gas.

Shine a laser through it and measure the doppler shift for turbulence? Or use a spectrometer to check for reaction byproducts? Not really cheap low-tech solutions though :-P
