I've tried buying plantains for pan frying but they always turn to mush on me.

Mush is actually one good way to cook plantains... but the ones available in US stores are typically already too ripe. Only thing you can really do with them is make tostones... double fried with squashing in-between. If you really want to cook with them you need much more unripe
