They freeze fine you know especially for smoothies. I’ve taken to buying a 10lb box (super cheap) and throw em in a bag in the freezer when they hit 10
This is also why in cultures that cook with this family, plantains are the dominant subspecies. They're basically not sweet at all, and more like potatoes or yams. It is used a lot in indian cooking. Plantains are my second favorite source of root-vegetable starch after potatoes
Mush is actually one good way to cook plantains... but the ones available in US stores are typically already too ripe. Only thing you can really do with them is make tostones... double fried with squashing in-between. If you really want to cook with them you need much more unripe
