The talks portion of a conference, while it may be informative or even entertaining, is there to make it a plausible business expense for everyone to fly out and stay in mid-level hotels. Conferences are about the "hallway track." I'm dubious that it can be replicated online.

Can be done, hallway and all. I’ve done it at small scale. You’re wrong about this.

how have you seen hallway chats replicated in remote conferences?

The sidebar chat in zoom or similar is far better than half the sad-ass low-serendipity conference hallways I’ve been in
. If you happen to be already well-networked at an event and people are eager to meet you, it’s great. If you’re a faceless-nobody attendee not so much.
