I've been doing this type of thing in public places to avoid nasties for years now and people would look at me funny. It took a pandemic to turn the tables, who would of known?

Also, i, like many others, sneeze/cough into the elbow. It's more hygienic than into the hand/air because we don't use elbows that much. If we start opening doors with them, it might become a problem.

OH I thought you meant arm rests on the doors that actually are in the right place. easy touch door handles are a great idea, unless you have kids. they all get fascinated with the idea of opening the door while the car is in motion. have to put those safety locks on

Just for triggering — they are. Knobs aren't. And you can push the door after that. A bigger problem is pulling the door. This is where It'd be hard not just to hold on, but to apply leverage at all opening stages. It's simpler to to detect movement and open automatically.
