Have you had a Japanese rolled omelet? Bought a cheap pan recently and tried it. Will try with Just Egg next. Interesting technique. You make it by rolling one thin layer, then adding more batter and filling another layer around the roll and so on 3-4 times. With stuff in between

These are great! Try it with some sheets of good seaweed as an inner layer, Cooke it in sesame oil, and blacken the bottom a bit as you roll it. It's really good. The thin layers blackened in the oil add a nice variance in texture and flavor.
