Data centers do this with hard drives. Cities do this with housing stock. At least good Jacobsian ones. Fabs do it slightly differently, a different application “eats” a process-node banana as it ages Militaries do it with equipment

If you can no longer make CPU’s in your fab because market has moved, make less demanding chips on it. Subsidiary chips tend to be a node behind. Maximize LTV of asset by using it into obsolescence as much as you can

yes. though one wonders about whether being trapped in old modes prevents early discovery of new modes. seems like a variant of the usual dilemma.
