Nobody has ever said “let that sink in” to me that I can recall.
I’m a bit offended. Do they think there are no depths for things to sink into?

Could be a compliment if they think your gut reactions are reliably as deep as others' thoughtful reflection 🤓
The phrase also feels vaguely salesman-y to me, as in "add additional salience points to this thing I threw out that I want you to focus on when framing your response"
