"High Peasant" referred originally to "simple food prepared with the best possible ingredients." Think a puttanesca sauce made with late summer dry-farmed tomatoes, Spanish salt-packed anchovies, capers from Pantelleria, olives from Gaeta, etc.: a peasant dish, done to the nines.

V interesting. How is hygge low cost? Also, high peasant feels only high cost relative to normal peasant, right? Much cheaper to make that than to go to a mediocre restaurant.

High peasant is not actually peasant. It's reconstructed fiction of peasant with high resources. Think of it as a pastoral art form. Hygge, based on my limited exposure to it in people's homes in Copenhagen, is definitely a low-cost thing.
