"High Peasant" referred originally to "simple food prepared with the best possible ingredients." Think a puttanesca sauce made with late summer dry-farmed tomatoes, Spanish salt-packed anchovies, capers from Pantelleria, olives from Gaeta, etc.: a peasant dish, done to the nines.

V interesting. How is hygge low cost? Also, high peasant feels only high cost relative to normal peasant, right? Much cheaper to make that than to go to a mediocre restaurant.

Absolutely true on both counts. The peasantness of High Peasant is completely fictive. And Hygge is about sitting around a fire on a long winter night with friends and family, sharing stories and nursing a cuppa or glass.
