Compute the structural properties (anisotropy, symmetries) and packing efficiency of various parts of the built environment: buildings, containers, interiors of apartments, package shipments, truck loads... apply your physics to it

Quantify subjective time perception... generalize your logarithmic aging thing to all scales based on emotions, events, interpersonal transactions etc

You asked for a "couple", these ain't good enough? Fine, if your range extends beyond solid state physics to fluids, I've been trying to define entropy for calendars, viewed as event flows. For eg. recurring appointment = low entropy.
