Tech question: if I have a condenser mic with an outlet for a monitoring headphone, and I plug in a headphone that has an inbuilt mic, what happens? Can secondary audio override the primary from the condenser mic, or is the secondary audio just discarded? Or do they interfere?

it's very unlikely that the condenser mic headphone jack supports audio input at all, so I think you'll be fine

Condenser mic shouldn’t even notice the headphone’s output. If it does, please contact your local anti-sentience authorities

Headphones with inbuilt mic have a special jack (tip-ring-ring-sleeve).
An audio output-only port will only have connections to tip, one ring and a long sleeve. (See fig)
So any headphone mic signal will end up getting grounded if you plug it into a device that doesn't take mic.
