I get why the post-production editing and merging the slides and video can get messy and complicated, but I don't get why the basic capture step is so janky.

A feature film, shooting a 10-1 ratio (meaning that for 10 minutes shot, 1 makes it to the final cut) could easily spend a month capturing that much material

a panasonic g7 with an ac adapter and a 256gb SD card (maybe even 128) could do that if the quality is important. If not, a cheap canon vixia camcorder would absolutely do that no prolem. If you need 2 mics, high end camcorder (low end of that canon XA11, high end canon c200)
