Something very Indian about idea of a “multi-cuisine” restaurant. Everybody: “It’s hard to do even 2 cuisines right” Most countries: “Let’s just build food courts” India: “Here’s mediocre Chinese, Mexican, Continental, pizza, burgers, and 4 regional Indian in one huge menu.”

Indian restaurants need to be "multi-cuisine" to serve a full family. Some will want curd rice, others One by Two Sweet Corn Soup, someone Gobi Manchurian and someone else Naan and Paneer. Not having multiple cuisines make them fail as a family restaurant for most families.

Growing up eating out pretty regularly in India, It's left me constructing meals that require at least 18 food groups on a single plate. I'm not an easy person to live with 😂
