Something very Indian about idea of a “multi-cuisine” restaurant. Everybody: “It’s hard to do even 2 cuisines right” Most countries: “Let’s just build food courts” India: “Here’s mediocre Chinese, Mexican, Continental, pizza, burgers, and 4 regional Indian in one huge menu.”

I suppose it’s a meta-thali concept. Hmm that would be a good name for a multi-cuisine restaurant: Meta-thali.

Come to think of it multi-cuisine is the Bollywood theory of restaurants. Every movie must be 3h and include comedy, tragedy, musical numbers, etc. Port to food.

In Singapore, you can see the gears of capitalism at work - many of the South Indian places all along Race Course roads have larger Mughlai and Indo-Chinese sections than the actual specialty they claim to represent (Kerala, Chettinad, whatever).
