Everybody: “It’s hard to do even 2 cuisines right”
Most countries: “Let’s just build food courts”
India: “Here’s mediocre Chinese, Mexican, Continental, pizza, burgers, and 4 regional Indian in one huge menu.”

This is the sort of thing I’m talking about. They’ve boomed in the last decade or two, but they were around even back in the 80s though we didn’t call them multi-cuisine and they were less ambitious. Many restaurants did Punjabi, Udupi, and Indian-Chinese. redsaltcuisine.com/menu/

Come to think of it multi-cuisine is the Bollywood theory of restaurants. Every movie must be 3h and include comedy, tragedy, musical numbers, etc. Port to food.
