This is the sort of thing I’m talking about. They’ve boomed in the last decade or two, but they were around even back in the 80s though we didn’t call them multi-cuisine and they were less ambitious. Many restaurants did Punjabi, Udupi, and Indian-Chinese.https://www.redsaltcuisine.com/menu/

Come to think of it multi-cuisine is the Bollywood theory of restaurants. Every movie must be 3h and include comedy, tragedy, musical numbers, etc. Port to food.

Indian restaurants need to be "multi-cuisine" to serve a full family. Some will want curd rice, others One by Two Sweet Corn Soup, someone Gobi Manchurian and someone else Naan and Paneer. Not having multiple cuisines make them fail as a family restaurant for most families.

True. Though some U.S. chain restaurants have some limited 'multi cuisine' menu. (e.g. Chili's, Fridays, Cheesecake Factory...)
