Are there good alternatives to outlining or mindmapping to break down a complex project into bite-sized chunks? Both disrupt flow and seem to kill sum-greater-than-parts effects.

Eat the elephant one bite at a time.
Basically, give up on the idea that you can plan it all out ahead. Fixate on a goal, sketch out a general path, and iterate rapidly. Trust that your future self will be equal to emergent problems, and prefer that mode to costly prevention.
