My iPad pro (a few years old) keeps crashing and thinking the battery is at 1% when it is at 100%... happened 1-2 times before last update, and now happens every 5 minutes with new update... what's going on :(

I had that happen with a Mac after battery replacement… turned out that the battery connector was just very slightly loose. (I doubt that’s your issue, but my point is that battery software is weird when reporting hardware issues)

I think that might in fact be my issue. Now it refuses to start up mostly, but occasionally does for a few minutes before crashing again.

I had the same issue on previous model and they replaced it to me. Something something hardware not talking to software.
Back it up and nag them.

Don’t even try to make it manageable, live with it. Replace it.

Rather than accepting random nonsense from the internet (99% of whose commenters are clueless re the issue, but have a very definite "Apple sux | is perfect" agenda") just make an appointment and take it to an Apple store.
At the very least they will diagnose it more reliably.
