I feel like I could use an exercise form that is based on rapid, unpredictable, unskilled whole-body movements. Like jogging/jumping jacks/burpees in place facing different directions while somebody (or an app) tells me to change directions or exercises randomly. Is this a thing?

Ecstatic dance certainly fits the bill of unpredictable, often rapid and unskilled movement if you're okay with being around others doing the same thing and traveling. In Seattle there's ecstatic I'm Capitol Hill at Dance Underground and in Wallingford at OmCulture
