Because the feedback was immediate. Because it's much easier than to set up a phone with the camera framing where they want to be standing, then set a timer?

a Quora poster says "Some of the very first selfies were shot in mirrors with back cameras, because the front camera was no good, or the phone didn’t have a front camera at all. This still goes on, to show off the device that the shooter is using, or just to get a wider image."

I'd guess looking in the mirror is by far the most common prompt for the thought "I should record what I look like". Or, probably even more common now, "I should share what I look like".
