I'm now wondering if there exist established cocktails that use a sour citrus juice and no sweeteners whatsoever, except for various Bloody Mary derivatives (arguably using tomato juice as a sweetener).

No, but I used to keep essentially a full bar at home (well, with fewer redundancies than a real bar) before I went to grad school and became a poor. Now I drink Schlitz with Malört shots.
