Is ‘unsub’ (‘unidentifiable subject’) a real FBI term or something Criminal Minds made up?

It is a real crime research term. If it was created by the FBI or not, I don't know.

BTW, it is "Unknown Subject". A subject that is known but cannot be identified properly is usually addressed as "John/Jane Doe" as a tradition coming from British law. To simplify application of law, they used "John Doe" as the plaintiff and "Richard Roe" as the defendant.
