they get that lecter is an urbane villain, not any sorts of specfic idea-level things about taste. also that line is from "the silence of the lambs" movie not the book "hannibal."

Ah ok, I’ve only watched the movies. What’s the most interesting idea-level thing about taste in the books+movies? I too don’t get much beyond basic urbane taste. Maybe a sense of minimalist simplicity = more horrifying. Ingredients aside, his cooking style is very elemental.
