Interesting. So when I think it's annoying that you have to press search icon to get to the settings in Waze (rather than have them on the top screen) is that because I'm a senior rather than because the designer isn't following UI conventions that I'm used to?

A bit of both. There is more variety in conventions and older people I suspect have less patience to deal with the variety and also expect it less, having been raised on more consistent top-down designed technologies.

Not only am I a senior, but I have also read 'The Design of Everyday Things' which advocates strongly for consistency in design

Except smartphones aren't designed by one person/org. They are platforms where a bunch of different people add things, and there's a limit to how much consistency can be induced by platform standards.
