If I were to really simplify - Blockstack is giving users ownership of data that they use to interact with different applications. Urbit is creating an entirely new self-sufficient layer to interact with applications and each other while maintaining full control of data

Urbit covers a much larger scope than Blockstack. On top of that, Blockstack incentivizes the creation of new apps by paying out monetary rewards. Every 30 days, it pays $200k to the apps that are voted the best. This leads to more apps but also some apps abuse the system
