Can anyone offer uses/examples of when a sinewave with only one bit per sample would be valuable?
I can think of PLL processing and first generation video games. Can you think of any other examples?

Radio telescopes tend to sample 1 bit resolution. I don't remember where I heard this, but this mentions it as well: lea.hamradio.si/~s57uuu/astro/
I remember now. The presenter also mentioned that they operate at negative SNR. I found that quite surprising! The linked article also mentions that.
