Buttermilk bacteria are exhausted/dormant, but other organisms can land there & party on the O2-rich surface. And mold can do amazing things. It might smell off first, or might not; txture/clumps = bad. Probably ok a bit past expiration, but don't go crazy.

I haven't ever had it get so acidic that it alters the flavor of baked goods, so that shouldn't be a huge concern. I've never, in my entire professional life, thrown out buttermilk. The old stuff isn't great for drinking or custards, but will still be great for baked goods.

Over time the taste is going to change. The fermentation doesn't just stop when it goes on the shelf. But unless it goes moldy (which it will eventually, after the seal is broken) it should be safe. Just disgusting. Or, you know, MORE disgusting.
