People sigh the same way when I suggest I’m worth a meal and a bottle of wine.

Most of the 'it's worth 10k on my server' is a combination of not truly understanding supply and demand and also at times someone thinking they are going to yank the system. Some of that blame goes to not understanding how pricing add ons such as TSM or Undermine work.
-
Yet at the same time I also use "that's worth ... " simply as I'm being too lazy to explain true value and how value range might work.

yep.. it sells for what it sells for, and every single server market is different - and it changes every second because the population changes. All you can do is focus on what needs most people need - and what YOU can do about providing that service. Buyer sets the market

I've seen a few items where I'm like "no one's going to buy this for that amount"

I hate that.. especially when you put it in at a more reasonable amount and suddenly get hate whispers because it was a massive undercut... like dude... no one will pay 300 gold per light leather...especially in 200 stacks.. this was a real thing..
-
He then undercut me by a copper over and over and sent a lot of hate mail and bitched in trade about me being me screwing up the economy.. o.O

"A thing is only worth what you can get someone else to pay for it" (as often shouted at the telly when they're banging on about house prices and how they're an investment)
