how is wanting to retain professions some may have built up over a decade min/maxing? What's wrong with BoA?

Wanting to retain your professions isn't bad. Wanting all the advantages without any disadvantages breaks the game.

how would making them BoA break the game? The farmer still must farm and the crafter craft.

It would devalue the fishing artefact and the BoS enchant, for example. And the entirety of World Quests.

its the suggestion that dual crafter + dual gather is greedy compared to 2 x gather/crafters.

which is crazy because it still requires the same time in game.
