Bubble and squeak is veg and potato leftovers, fried up. Typically includes cabbage and egg to bind it all together. The bubble from the eggs; the squeak from the cabbage.

I've never heard of egg in it! That would make it some sort of cabbage quiche. It's leftover Sunday roast, cabbage, mash, greens, maybe bit of bacon
