I'm confused, where are you losing choice? You want to trust the network administrator for some reason, so you just trust them. If you don't want to trust them, now you have the option to not trust them. It seems like you've gained a choice, no?
I'm telling you that DoH solves a real problem that real users, including me, face everyday. I'm also telling you that if you're one of the incredibly lucky few who don't need it, you can disable it. We already know the impact of the current default: widespread snooping.

I'm happy that you have a wonderful ISP, only travel to hotels with trustworthy administrators and only drink coffee at cafes with good privacy policies. Not everyone can make those choices, and the defaults should protect them.
