I get it, you don't understand why Cloudflare can be trusted more than "Pete's Cafe Guest WiFi". I just think very very very few people agree with you. 
Yes, I'm in favor of making a sane default trust decisions on behalf of users. It's not just about WiFi, I don't think Comcast or Time Warner Cable should be able to monitor your activity either. Adoption of TLS + DoH + eSNI can make that realistic.

This is insane, do you really argue that users are giving informed consent to be monitored when they use free WiFi? Let's be clear, you want to monitor users, and you object to DoH because you don't think users will opt-in to allowing you to monitor them.

But it still introduces a single point of logging, doesn't it? One NSL and you get a live DNS history of all Firefox users.

Yes, I think a RR solution would be better to avoid the SPOF. I don't think that's a good reason not to encourage adoption.
