‚Bricked‘ used to mean unrecoverable without special tools. If it’s “just“ memory corruption, a simple reboot would probably fix it - no DFU restore (or worse) necessary, right?

Of course he knows. But Natasha talks about a kernel panic. A kernel panic is bad. A remote bricking is terrible^100.

And, honestly: If someone can destroy my devices from remote, I DO think that this is worse, compared to just a kernel panic that might be cleared by a reboot. 3/3

If someone can take over your device, one of the things they could do is stop you from using it (why they would waste a valuable exploit doing that, i don't know). We are full-time professional vulnerability researchers, but thank you for explaining severity to us.
