You're making the mistake of tracking peak to drop, but you aren't accounting for the 200,000 players who joined and played within the 50 minutes it took to hit peak. More people join than leave = number goes up. More people leave than join = number goes down. Maths!
If you have other questions I'd be happy to explain. It can be hard to imagine, but players login/logout at the same time, so the number changing is just an indicator of login versus logout. Some people play for a few mins, some for an hour, but most somewhere in the middle

Another factor is time of day. The update launched at 10pm UK/EU time, so a bunch of players stayed up to play if for as long as they could, then had to go to bed. The later we go, the more players have to go to sleep after getting as many eggs as they can

Also I got the number wrong earlier - "100k drop" doesn't happen until 2h20m after update launched. The "100k drop" isn't players who just logged in logging out, it's players who were already logged in way before stopping to go to sleep or whatever
