      *sigh* It doesn't look like @stripe's invoices are safe for creating one-off invoices on a payment form. It would have been nice to create an invoice, pay it, then just tell Stripe to send a "paid" invoice afterwards so the customer has a record.

      You cannot create a non-charging empty invoice, then add items to it. Stripe seems to require you first create an invoice item then the invoice that will collect previous items. Sadly if an error happens in between I think the invoice item may unintentionally advance on its own.

      I already did that, I got an error saying there were no charges, suggesting an empty invoice can't be created. But as i understand if I create an invoice item first but have an error before creating the invoice and tell the user it failed. The invoice item will still post later.

          Deletion is also a separate API call. Payment handling code is supposed to avoid these kind of scenarios that could result in unexpended charges or double spend.
